Making ginger honey

A glass of good beekeeping honey, e.g. Summer bloom.
1-2 inches of medium size.

Peel the ginger and cut into thin slices. Take 2-3 tablespoons of honey out of the glass to make room for the ginger slices. Add the washers to the honey in the jar and screw in well. Place in a sunny spot for at least 14 days and turn the glass 90 degrees each day to distribute the liquid that is being pulled out of the ginger. Of course, stirring and snacking can not hurt either. The longer the ginger stays in the honey, the more intense the taste and the ginger crystallizes. The honey can be used as usual. Add the ginger to desserts, tea, cake dough, salad dressings, soups (pumpkin soup, carrot soup) or just a slice if it scrapes in the throat.
