Making apples "winter proof"

Wash apples, peel, cut out the core casing, pressure points, etc. neatly and lay in lemon water until grated (grated, sliced). So the apples do not turn brown.


Then the apple pieces with a not too fine grater (we want to have rasps and no apple sauce) rub. I mix a mocha spoon of sodium benzoate and a little tartaric acid per gram of apples into the graters. Now I squeeze the juice out as well as possible and stuff everything tightly in mason jars, close them with screw caps and from the post office into the pantry.

And since I've already worked so hard with rubbing, I reward myself and my family with an Almasch Pite (apple pie).
