Matjes with parsley potatoes and green bacon beans

My husband and I are avowed fish eaters and like the aquatic animals very much and in all possible preparations. Today it was again Matjes nature, with onion rings and parsley potatoes and green bacon and melted butter.

I highly recommend this matzah preparation. The dish is done quickly and with little effort and tastes really delicious.


But I would like to point out that you should use really fresh Matjes at the fishmonger and not the packaged from the supermarket. The taste of fresh matjes can not be replaced by any packaged variety.

ingredients

For 2 portions:

  • 4 fresh Matjes double fillets
  • 2 onions
  • Small potatoes, amount for 2 persons after appetite
  • 350 to 400 g of green beans, fresh or like TK-Ware
  • 1 pack of lean ham cubes
  • 1 small piece of butter
  • fresh parsley
  • melted butter, amount as desired
  • Pepper, salt, nutmeg

preparation

  1. For the bacon, I melt a small piece of butter in a saucepan, add a small chopped onion and the ham cubes and let everything sauté briefly.
  2. Then the beans are added, these are seasoned with pepper, salt and a little nutmeg and then mitgeschmurgelt briefly before I pour up with a little water and give the lid on the pot. The beans can now cook over low heat.
  3. In the meantime I washed the potatoes and put them in salted water for cooking.
  4. Now the matjes are placed on the plates complacently, the other onion is cut into thin rings and I put these generously on the matjes.
  5. I melt the butter for the potatoes and put them in butter pans, which I also drape on the plates.
  6. When the potatoes are cooked, I briefly fry them cold and remove the pelle. If necessary, the peeled potatoes are again briefly reheated in the microwave.
  7. Now I sprinkle a lot of freshly chopped parsley on the potatoes.
  8. The bacon beans are also poured into a bowl and now the table may be set and eaten.
