Mediterranean hot peppers

I always make antipasti myself, including these hot peppers. I buy the pepperoni in brine (Turkish / Kurdish).

ingredients

  • pepperoni
  • Mediterranean herbs
  • some garlic cloves
  • olive oil

preparation

  1. I let them drain well in a sieve first, piercing them with a roulade needle now and then to remove more of the brine. Then rinse briefly under running water and allow to dry well.
  2. Put the hot peppers in a large lidded container, mix with Mediterranean herbs and a few Knobizehen and cover well with olive oil.
  3. Finally complain with a small plate and let cool and dark for about 3 weeks. The whole thing lasts months. It is important that never something protrudes from the oil, because it then mold!

The procedure can also be with olives, dried tomatoes ect. to repeat. By the way: If you do not have fresh herbs on hand, you can do it with the dried version and it will be great as well.
