Mexican apple pie

The recipe I have from a friend and since it must be fast, easy and tasty, I'll gladly pass it on!

For the filling:

500 g of apples (or plums or other fruit), 75 g of chopped almonds, juice of half a lemon, 40 g of butter, 50 g of sugar


For the dough:

150 g of butter, 100 g of sugar, 1 p. Vanilla sugar, 3 eggs, 125 g of delicate Hafger flakes, 50 g of flour, 1 heaped teaspoon baking powder, grated peel of an untreated lemon (or lemon), 1 pinch of salt, a little fat and oatmeal for the springform.


For the filling, the fruit may be peeled and chopped and steamed with the juice of half a lemon. After cooling, the fruit is mixed with the melted butter, sugar and almonds.


Make a sponge cake from the remaining ingredients and add 3/4 to a greased spring-pan sprinkled with oatmeal. Spread the filling over it and place small piles on the filling from the rest of the dough with a teaspoon. Bake for about 60 minutes at 190 degrees bottom shelf.

Why this is called "Mexican", I do not know and not where the recipe actually comes from.

At first I thought that with the oatmeal is certainly a dusty matter, but the cake is madly juicy by the many butter and delicious. He is also quite powerful and satisfying fast. Unfortunately my eyes were bigger than my stomach. Thank you "Auntie Janne"!
