Mussels in tomato red wine sauce

Finally mussel time again - that's what I've been waiting for: I love mussels and finally I can enjoy them again! Mussels should only be bought and enjoyed in the months that end with an "R". Of course excluded are frozen products.

I only use fresh mussels for this tip. So far, I have prepared them in a broth with vegetables and white wine. This was boring for me now and I would like to share this recipe with those who like mussels as much as I do!

ingredients

  • 1.5 kg of mussels
  • 1 tbsp oil (optional)
  • 1 onion
  • 1 clove of garlic
  • 1 can of lumpy tomatoes
  • 100 ml dry red wine
  • Spices: basil
  • optionally other spices
  • possibly passed or cut fresh tomatoes

preparation

  1. Before the mussels can be prepared, they must be washed thoroughly and brushed off best with a brush. Open mussels may not be used. Put the mussels in a pot and simmer for about 20 minutes after boiling.
  2. Heat the oil in a large pan and fry the small diced onion and crushed garlic until glassy. Then add the tomatoes and the red wine.
  3. After boiling with salt, pepper, basil (or other spices) to min. Heat and simmer for 20 minutes. Try! If the red wine still tastes too much, let the liquid reduce a little further. If the sauce was too small, then the tomato was full but not too much. Try and season as needed.

The mussels can also be combined very well with pasta. When the noodles have the desired cooking time, garnish with thrown mussels and add sauce. Eat the dish very much with farfalle or just with the sauce!
