Orange and fennel salad
Now is just fennel and orange time. Therefore, I would like to share my delicious salad.
For this you need:
200 g of chopped pistachios
2 fennel tubers
4 oranges
1 pomegranate
For the dressing:
200 g sour cream
Juice from a lemon
2 tablespoons honey
First roast the pistachios in a frying pan without fat and allow to cool.
Wash the fennel tubers, clean them and remove the stalk. Peel and filet the oranges. Halve the pomegranate and remove the seeds.
Mix the finely chopped fennel with the orange fillets and pomegranate seeds in a bowl.
Now mix the sour cream, the lemon juice and the honey into a dressing and lift it under the salad, sprinkle with the roasted pistachios and serve immediately.
If you do not like sour cream or have it, you can also prepare the dressing with orange juice and you can also omit the pistachios if you do not like them. Even the pomegranate seeds I have already omitted, when I could not get one.
