We love asparagus, and when the season starts, there are asparagus in all sorts of variations. The first German asparagus has come on the market and today there was delicious oven asparagus with an asparagus herb sauce.

  • 50 ml white wine
  • 30 g butter
  • 3 stems of tarragon
  • Salt, pepper and sugar

Asparagus herb sauce

  • 400 ml asparagus cooking
  • Crush 15 g of tarragon
  • Crushed 15 g of basil
  • Roughly crushed 5 g of parsley
  • 50 g butter
  • Salt pepper and lemon juice

preparation

  1. For the furnace asparagus: Peel the asparagus to cut off the woody ends.
  2. Cut the asparagus spears to a length of approx. 18 cm.
  3. Spread aluminum foil on a baking tray and place the asparagus stalks next to each other.
  4. Season the asparagus with salt, pepper and sugar.
  5. Pour over the wine and spread the butter in flakes.
  6. Spread the tarragon over it and close the aluminum foil so that everything is closed very loosely.
  7. Cook the baking tray with the asparagus package in a 200 ° C top / bottom heat for 25 minutes.
  8. For the asparagus herb sauce: Make a broth from the skins and the sections in 500 ml of water with salt and butter.
  9. Remove the asparagus peels and cook the asparagus sections in the brew until soft.
  10. Put the asparagus pieces in a shaker and add 400 ml of the stock. Puree and add the herbs and butter and finely puree everything.
  11. Season the sauce with salt, pepper and lemon juice.
  12. Put the asparagus on top and add the asparagus-herb sauce.
