Ox train soup from the pressure cooker

Now, in winter, you really like eating soups. Not only when you get tired from the job in the evening, the preparation should go relatively quickly.

I would like to introduce you to a recipe for a ox soup, prepared with the Fissler vitavit comfort pressure cooker.


Although is normal? Soup meat? cheaper, but a soup with oxtail tastes much better! And now and then you should treat yourself to something special.

ingredients

  • 4 large or correspondingly smaller pieces of ox-drag
  • 2 medium parsley roots in one piece
  • 2 large carrots in one piece
  • 2 yellow carrots in one piece
  • 1/4 of a small celery tuber
  • 1/2 small onion
  • Macis flower (in total no more than 2 x 2 cm, careful)
  • 3 teaspoons salt
  • 5 peppercorns
  • 3 tbsp oil
  • chives

preparation

  1. Lightly roast the ox lobsters in the hot oil. Add salt, pepper, onion, macis flowers and add 1.5 l of water and close the pot.
  2. Boil on the stove at maximum heat (when setting on the cooking crown 2) until the yellow mark appears on the cooking display. Now you can switch back the stove until the green mark appears. From now on, the cooking time starts, which is 20 minutes.
  3. At the end of the cooking time, let the pot evaporate slowly with the bolt / lever on the pot handle. Use this lever gently, slowly or with pauses until the steam has completely escaped from the pot. If you press said lever too fast or too hard, liquid escapes, which should not necessarily be. But you will have that feeling quickly! It sounds more complicated than it is!
  4. Above all, you, who have never worked with a pressure cooker, do not have to worry! The pot can not explode or "go up in the air". The lid can not be opened until all steam / pressure has escaped. You could - not even by force - open the pot! So if, in the manner described, the steam / pressure was released, you can open the pot, or solve the lid.
  5. Now continue with the recipe: You now have the opened pot in front of you. Add the root vegetables to this soup, close the pot, switch the cooking crown to level 1 (= slow speed) and continue as before: wait until the yellow ring appears on the cooking display, reduce heat until the green ring is visible and, from now on, cook for 4 minutes.
  6. After the cooking time, allow the pot to evaporate, as already described. But you are already masters and that is no longer a problem for you.
  7. To serve, dislodge the meat from the bones, cut the root vegetables into oblique strips and serve the soup, sprinkled with fresh chives.

Theoretically, the meat and root vegetables should suffice as a soup substitute, but I like to serve them with baked peas.

Of course you can also vermicelli, semolina dumplings, frittata ... etc. are enough.

If you wanted to prepare this good soup in the usual way, the cooking time will be at least 45 minutes, except for the preparation time.
