Pasta with asparagus

Recipe (for four servings)

  • 400 g asparagus
  • 1 onion
  • 400 g spaghetti
  • 2 tablespoons butter
  • 100 ml white wine
  • 300 ml creme fraiche
  • 50 g of fresh grated Parmesan
  • Black pepper from the mill

That's how it's done

  1. Peel the asparagus and cut into pieces about 5 cm in size and cook until firm in salted water.
  2. Pour asparagus into a sieve and drain. Collect the cooking water and put aside 5 tablespoons. Dice the onion.
  3. Bring salted water to a boil and cook noodles al dente.
  4. Meanwhile, melt the butter in the pan and fry the onion in a glassy sauce. Add the asparagus pieces and fry for 2 to 3 minutes. Pour in the asparagus water and the wine and simmer over high heat until half of the liquid has evaporated.
  5. Add the crème fraîche to the sauce and heat until it starts to boil. Then stir in half of the Parmesan. Season with salt and pepper.
  6. Sauce over the pasta, Parmesan over it and good appetite.
