Pesto turkey escalope with crispy roasted vegetables

We like to eat poultry and fresh vegetables. Here is a suitable dish:

ingredients

  • Turkey breast or turkey breast fillet - to taste chicken breast / fillet
  • 1 glass of pesto (rosso or genovese or any other variety, eg with olives, walnuts)
  • Fat to the boil
  • pepper
  • salt
  • paprika
  • chilli flakes

For the oven vegetables (vegetables at will):

  • Red, yellow, green peppers
  • tomatoes
  • green beans
  • onions
  • zucchini
  • Brussels sprouts
  • olives
  • fennel
  • small spicy pickled chili peppers
  • spring onions
  • oregano
  • thyme
  • rosemary
  • garlic
  • 1 onion
  • 1 egg
  • breadcrumbs
  • Gurnard for the schnitzel
  • Olive oil or seasoning oil for the oven vegetables

preparation

  1. First put the cleaned vegetables and the chopped garlic in the frying pan of the oven. Season with herbs and spices, mix with olive oil and cook at 180 degrees for 45 minutes in the oven.
  2. For the filling dice 1/2 pepper, 1 onion and a few tomatoes very small, season with chili, salt, pepper, paprika to taste. Sauté in a pan in a little fat.
  3. From the washed and dried meat, cut slightly thicker slices (you can cut them very evenly, if you let the meat briefly in the freezer rusted).
  4. Cut a bag into the schnitzel - Caution: Do not cut the meat completely, keep both ends closed.
  5. Now mix the pesto well with the steamed vegetables.
  6. Spread the meat pockets on the inside with the pesto-vegetable mixture and squeeze them together.
  7. Turn it into egg and then into breadcrumbs (a few drops of oil in the whipped egg will make the breadcrumbs adhere better).
  8. In the frying pan, fry in plenty of hot clarified butter until golden brown on both sides.

I serve the dish without further side dishes; Rice fits very well with it.
