Fine asparagus soup from asparagus water

ingredients

  • 500 ml cold asparagus water
  • 30 g butter
  • 30 g of flour
  • a little salt and pepper
  • some vegetable stock
  • a dash of milk and chives (dried or fresh)

preparation

  1. Melt the butter in a saucepan over medium heat, gradually stir in the flour, then stir all the time so that there are no lumps, the roux must remain light.
  2. Gradually deglaze with asparagus water (with a dash of milk) and keep stirring until it has a creamy consistency.
  3. Finally, with salt, pepper and who likes to taste vegetable broth.

Since I always have dried chives at home, I have now added a big spoon. Boil briefly - done!

A little hint: you can now add asparagus pieces - tastes even better!

Serve with toasted bread or toast.
