Fine asparagus soup from asparagus water
ingredients
- 500 ml cold asparagus water
- 30 g butter
- 30 g of flour
- a little salt and pepper
- some vegetable stock
- a dash of milk and chives (dried or fresh)

- Melt the butter in a saucepan over medium heat, gradually stir in the flour, then stir all the time so that there are no lumps, the roux must remain light.
- Gradually deglaze with asparagus water (with a dash of milk) and keep stirring until it has a creamy consistency.
- Finally, with salt, pepper and who likes to taste vegetable broth.
Since I always have dried chives at home, I have now added a big spoon. Boil briefly - done!
A little hint: you can now add asparagus pieces - tastes even better!
Serve with toasted bread or toast.
