Pickled Harzer Roller (hand cheese)
You need:
- 1 pack of Harzer scooter
- Caraway whole or ground
- Light or dark beer
That's how it's done:
For the first layer put a scooter in a clay jug (beer mug) sprinkle cumin over it and pour on beer. And you do that layer by layer.
Finally, a damp tea towel is crumpled into the jug and left to marinate the whole thing in the kitchen for three days. Please moisten the dishcloth daily.
I prefer ground cumin and dark beer or smoked beer - there we have enough of it in Bamberg.
This is a delicious spread :-)
