Well, first of all, less is often more. This is especially true for pizza! If you want to eat (delicious) pizza in the evening, you should prepare the dough in the morning or at noon. I try to describe everything exactly.

  • 1000 g of flour (405, optimally would be type 00)
  • 5 heaped tsp salt
  • 1/2 he cubes of fresh yeast
  • 600 ml of lukewarm water

sauce

  • a can of peeled tomatoes
  • about 1 teaspoon salt
  • Mozzarella (di Bufalo) for the toppings
  • a little olive oil
  • Basil or oregano
  • Garlic (if desired)

preparation

  1. Dough: Put flour in a bowl. With a glass in the middle of a depression press, so that a "crater" is created. 5 go. TL salt into the water and pour as much of the lukewarm water into the crater, as in these fits, there, the fresh yeast crumble. Wait 15 minutes.
  2. Sauce: In these 15 minutes one can puree the peeled tomatoes, with a blender, add salt, finished.
  3. Koblauchöl: Squeeze or grate garlic cloves (depending on utensils), cover with olive oil, a pinch of salt, now just let it steep.
  4. Now the dough is kneaded well with your hands, gradually adding the remaining water. Continue to knead well (preferably from the bowl and place on a flour-strewn worktop) and then rest for 2 hours covered with a damp towel (against crust).
  5. After the 2 hours, the dough should have doubled in volume. Cut the dough into 6 equal pieces.
  6. TIPIf you want to make the dough even looser you should be patient and cover the dough again with a damp cloth for the next 6 hours, otherwise it helps to add some more yeast to the dough (shortens the rest period) ,
  7. Preheat the oven to 250 ° C if more goes, so much the better.
  8. At the earliest now (see tip) the dough is flattened, or rolled out DÜNN. Place the round dough on a CONDITIONED BAKING PLATE.
  9. Spread a little olive oil on the bottom of the dough, then place the tomato sauce in the middle of the dough and evenly distribute the sauce in a circular motion with the back of the spoon.
  10. Mozzarella ball (ideally mozzarella di bufalo, buffalo mozzarella) express well to rid them of excess fluid. Then simply crumble the mozzarella ball into the pizza on the lowest rack, wait for 6-8 (!) Minutes, remove the pizza, sprinkle with fresh basil and / or oregano, add garlic oil.
