Polish potato noodles - Kluski slonskie

Here is a recipe for Polish potato noodles, a nice accompaniment to meat or fish for all those who do not feel like potatoes:

1.5kg of potatoes
1 pack of potato starch
2 eggs (only yolk)

Cook potatoes and stomp. Flatten the mixture in a bowl and cut into 4 pieces with a knife (like a pie). Take out one quarter and give it to the other 3/4.


Put 2 yolks into the gap and fill up the gap with potato starch. Knead well until a malleable dough is formed. Make approx. 2 tablespoons of dough into a ball, make a small recess in the middle with one finger.

Put the noodles in boiling salted water and cook until they float on the surface. Depending on the size, continue cooking for 1-2 minutes, scoop out ... done.

Try the noodles before you serve them, depending on the potatoes and size, they may take longer, sometimes shorter to cook. They are finished when they are no longer floury in taste, but are already firm and slightly sticky.
