Potato soup with vegetables and garlic sausage

A simple dish that convinces in taste: potato soup with vegetables and garlic sausage.
ingredients for 4 persons
- about 1 kg of potatoes
- 400 g Mettwurst or Turkish garlic sausage
- 1 stick of leek
- 3 carrots
- the green of about 4 stems of celery (blanched celery)
- parsley
- 400 g peas (I prefer TK)
- oil
- 1 L vegetable stock
- 1 cup of sour cream or crème fraîche
- Chili, salt
preparation
- The potatoes and carrots are cut into small pieces.
- The leek cut into rings.
- The green of the blanched celery is finely chopped, as well as the parsley (curly or smooth).
- The TK peas are doused with boiling water.
- The vegetable broth is prepared (grainy broth or cube).
- Now put the vegetables in the broth, always try, salt and possibly Maggi or add more brewing powder.
- Slice the garlic sausage (Sucuk) or Mettwurst, pepper sausage or Pfefferbeißer and fry in a pan with a little oil until crisp.
- Drain off excess cooking liquid of the soup and keep it (gives very tasty broth and can also be frozen) and refine with a cup of sour cream or crème fraîche.
- Pour into soup bowls, place the crispy slices of sausage before serving and sprinkle with parsley.
