Pumpkin soup with sausages and Mettklößchen

Actually I do not like pumpkin but after this pumpkin soup I am addicted!

ingredients

  • 500 g pumpkin
  • 600 ml broth
  • 150 g of cream
  • parsley
  • Sausages or Mettklöße
  • pepper and salt

preparation

Core the pumpkin, peel it if necessary (in case of Hokkaido for example, the peel can stay on it) and cut into small pieces. Boil in the broth (instant) and puree. Add the cream and bring to a boil again. Add the parsley, sausage and Mettklöße, leave to simmer and then season with salt and pepper.

I like to eat with Mettklößchen and my kids prefer sausages. So we both come in!
