Quark cake with berry muesli, sugar-reduced

Cooking or baking time: 50 min.
Rest period: 10 min.
Total preparation time: 1 hr. 20 min.

This super delicious cake has no flour and no granulated sugar. Also great as a dessert!


  • 1000 g of lean quark
  • 100 g of berry muesli
  • 3 tablespoons cooking oil
  • ½ pack of baking soda
  • 4 eggs
  • 50 to 100 g Xucker premium (depending on taste)
  • 1 packet of lemon peel rubbed
  • some cinnamon
  • powdered sugar


  1. Mix the curd cheese and berry muesli in a large bowl.
  2. Add the oil, baking powder and cinnamon and stir well.
  3. In a separate bowl, whisk eggs together and stir. Xucker and lemon peel. Mix very well.
  4. Add egg mixture to the quark mix. Mix thoroughly with a mixer.
  5. Lay out large springform pan with baking paper. Put the paper over the edge. Pour in the quark mixture and smooth. Lightly tap the mold on the table to make air bubbles disappear.
  6. Bake in the oven at 180 degrees for 50 minutes.
  7. When baking the cake goes up first, then it is flat again.
  8. Let stand in the oven for 10 minutes. Then take out and let cool.
  9. Sprinkle with powdered sugar. Let it taste good!
