Quiche with green asparagus and tomatoes

The asparagus season is slowly coming to an end. High time to bring the healthy vegetables to the table again.
My recipe is not revolutionary, but very tasty.
Ingredients for 6-8 servings
- 250 g of plain flour
- 125 g of cold butter
- 1/2 kg of green asparagus
- 1 cup of cocktail tomatoes
- 1 tsp sugar
- a little freshly squeezed lemon juice
- freshly grated, spicy cheese (I take mountain cheese and plenty of it ;-) ...)
- 3 eggs
- 100 ml whipped cream
- 100 g creme fraiche
- Salt, pepper, spices according to your own taste
- fresh herbs (parsley, chives, a little chervil)
preparation
- 1 Spring or Quicheform (mine has 26 diameters) grease and flour.
- From the flour, the butter, the 1/2 teaspoon of salt and about 5 tablespoons of water knead a smooth (Mürb) dough and chill - who pushes him into the mold and with these in the fridge, makes it even easier!
- Wash asparagus and tomatoes, of course. Halve the tomatoes. Nevertheless, asparagus (if possible, peel the lower third) and blanch for 2 minutes (salt the cooking water well, sugar and add a dash of lemon) - cold quench.
- Preheat the oven to 200 degrees.
- Rub the cheese and mix with the cream, creme fraiche, spices and herbs.
- Spread the asparagus and the tomatoes evenly over the dough and cover with the cream.
- For (depending on the stove) about 40 minutes from the oven.
Baked golden yellow, sprinkled with fresh chives and a fresh salad - does it take more?
