Quince cake or cake with crunchy crust

Here for all quince fans a great recipe for a cake or a cake, at will, both delicious! Although the preparation is a bit time consuming, but the effort really worth it!

The ingredients are enough for a Springform ø 26-28 cm, for a baking sheet simply take twice the amount of ingredients for toppings and dough, the crumble amount is sufficient for a medium baking sheet.

For covering

  • 3 large quinces (about 800 g)
  • 50 g of sugar
  • 120 ml of water
  • Juice of ½ lemon

For the dough

  • 175 g of butter
  • 125 g of sugar
  • 1 pck of vanilla sugar
  • 3 eggs
  • 175 g cake flour (Type 550)
  • 40 g of cornstarch
  • ½ pck of baking soda
  • 1 pinch of salt

For the crumble

  • 100 g of butter
  • 50 g of sugar
  • 50 g of honey
  • 2 tablespoons cream
  • 100 g sunflower seeds
  • 50 g hazelnuts or walnuts (roughly chopped)
  • 50 g almond slivers
  • 1 pinch of salt
  • 1 pinch of cinnamon, cloves and cardamom as desired

preparation

  1. First preheat the oven to 200 degrees (top / bottom heat).
  2. For the topping, the quinces are washed, quartered, the core box is removed, peeled and then the quarters are cut into even columns (I have divided each quarter into 4 columns).
  3. In a saucepan, caramelize 50 g of sugar and sauté with 120 ml of water, then add the lemon juice, add the quince slices and simmer for about 8 minutes over a moderate heat (they should not be too soft!). Then drain on a sieve and let cool.
  4. For the dough, stir the room-warm butter with the sugar and vanilla sugar until frothy, add the 2 eggs one after the other and continue stirring. Mix the flour with cornstarch and baking powder and sift, add one-third of the amount to the butter-egg mixture, then beat the third egg underneath and then add the rest of the flour mixture and a pinch of salt. Then spread the batter evenly on the baking paper bottom of the Springform pan and evenly distribute the cooled quince slices.
  5. Lightly fry the sunflower seeds, nuts and almonds for the crumble in a pan. Boil butter, sugar, honey and cream in a pot and simmer for about 5 minutes, then stir in the sunflower seed-nut-almond mixture. Spread this crumble mixture on the quince.
  6. Now it finally goes into the preheated oven and after 30-35 minutes this wonderful baking is completed.
  7. After cooling, then just cut into pieces and enjoy - very, very delicious with some whipped cream!

tip

Of course you can also bake this cake with apples or pears, but they do not have to be pre-cooked.
