Quince quark cake with sprinkles

Another recipe for a wonderfully fruity-succulent Sunday cake with quince and quark for all who like quinces! If you do not like or do not have quinces, you can also use pears or apples.

For a Springform ø 26 or 28 cm

  • 175 g of butter
  • 250 g flour
  • 90 g of ground hazelnuts (alternatively almonds)
  • 100 g of sugar

covering

  • 1 kg of quince
  • 2 eggs
  • 500 g quark
  • 80 g of sugar
  • 1 pck. Custard powder
  • 1 pinch of salt
  • 60 g raisins
  • something rum
  • 30 g fresh ginger
  • 200 ml white wine (or apple juice)
  • 50 g of sugar
  • 1 cinnamon stick

preparation

  1. The raisins are softened (preferably over night) in rum or apple juice.
  2. The oven is preheated to 200 degrees (or convection: 180 degrees).
  3. The quinces are washed, quartered, the core cut out, peeled and then cut into thick slices.
  4. Then the ginger is peeled and finely grated, boiled with 50 g of sugar, the cinnamon stick, the quince slices and the white wine / apple juice in a large saucepan and steamed covered on low heat for about 10 minutes (the quinces should not be too soft). Then let the quince columns drain and cool (catch the broth!).
  5. From butter, flour, hazelnuts and 100 g of sugar, crumbs are kneaded. Two thirds of it is given as a soil in a greased Springform form, while a small edge is pressed. About half of the quince slices and raisins are then distributed on the ground.
  6. Now the eggs are separated. The quark is mixed with 80 g of sugar, the egg yolk, the custard powder and the cooled quince Sud. Finally, the egg whites beaten stiffly with a pinch of salt are carefully lifted, the coating mass is placed on the quince layer and smoothed out. Then spread the remaining quince slices, raisins and sprinkles over it and put it into the preheated oven!

After about 1 hour, the cake is ready and after cooling, you can serve and enjoy!
