Who invented raclette?

No, it was not the French, but the Swiss! The word "raclette"? Although it comes from the French word "racler", but originally comes from the Swiss Alps, more specifically from the Valais, which partly consists of a French-speaking population. In German means "racler"? nothing else than "scraping"? or? scratch off ?. In the past, today's "raclette cheese" became? as? roast cheese? known. In addition, at that time alphhers did not gather at the table grill, but at the open fire. As a rule, they have laid Gommer Bergkäse halves with the cut surfaces flat on a board next to the fire. The cheese started to melt slowly. As the cheese was lightly grilled at the same time, it also took on a typical smoke flavor. The shepherds scraped the shepherds in portions onto their plates with a scraper and then, for example, spread them on potatoes or on the bread.

Over time, this type of cheese preparation was out of date. A raclette oven was developed that required much less effort and power compared to traditional raclette preparation. The traditional raclette on the open fire has been replaced and is now shown only on major holidays or as a popular tourist attraction.

Raclette test recipe

Raclette test recipe: sausages, shrimp & vegetables barbecue.

Ingredients (for 3 persons):

  • 450 g of raclette cheese
  • 1 yellow pepper in thick strips
  • 1 red pepper in thick strips
  • 1 eggplant in half slices
  • 1 zucchini in slices
  • Olive oil, Italian herbs, salt, pepper for marinade
  • 6 boiled potatoes
  • Arctic sea shrimp 180 g
  • Nürnberger Rostbratwürste 300 g
  • Ketchup

Preparation:

If possible, you should remove your food from the fridge 30 minutes in advance! Wash the vegetables and drain in a colander. Then cut into small portions and place in a well-sealed container. Stir oil with salt, pepper and Italian herbs to a marinade and mix with the vegetables. Then close the container with the lid and shake well to distribute the marinade well. Now the vegetables are ready to be grilled!

Put the sausages, prawns and vegetables on the grill pan and sauté. You do not have to stab Nuremberg sausages, they will not burst like that. The raclette cheese should rather be in the pans later, because the cheese needs less grill time to melt.

Peel the cooked potatoes, cut into slices and finally pour over the melted cheese. Serve with the finished grilled vegetables, shrimp and roast sausages.

Other uses:

Raclette Test Recipe: Grilled vegetables, shrimp and vegetables on the plate.

There are numerous combinations that you can use and try with the raclette, which taste incredibly delicious. The basis of every raclette is always cheese and boiled potatoes! On a raclette grill you can prepare not only cheese, but also fish, sausages and meat. Even vegetarians and vegans can try countless variations. Lots of vegetables and fruits, tofu as well as vegan sausages, cheese imitations from the vegan market and quark pans can be grilled on the device.

The food is usually eaten right after the barbecue, because it tastes hot the best and most intense. The melted cheese tastes best when hot or warm, is more flavorful and leaves a wonderful taste in the mouth. Put everything on the raclette grill, what comes to your mind? There are hardly any limits here. Afterwards, everyone can combine the food to their liking and add small extras such as corn, gherkins, olives, kidney beans, silver onions and so on. A warm, beautifully airy and crunchy baguette on the outside must not be missed!

To enjoy, for example, the holidays, so you should treat yourself to a delicious banquet. With a raclette grill eliminates any amount of kitchen stress? when you have to prepare the ingredients (meat, vegetables, etc.).

Four raclette grills in comparison test

First wipe the pans, griddles and whiskers with hot water or a damp cloth. How exactly one cleans each device before its first commissioning, is in the respective instructions for use. The housings of all raclette grills have been carefully wiped off with a damp cloth, as each unit in the box collects dirt and dust. Each grill was heated to its maximum level without food before being used for the first time, to burn in the applied protective layer and to neutralize the odor and smoke (How and how long? Of course, we have properly ventilated the room afterwards.

Rommelsbacher RCC 1500 Fashion

The Rommelsbacher RCC 1500 Fashion was kindly provided by ROMMELSBACHER ElektroHausgeräte GmbH for testing!

Rommelsbacher RCC 1500 Fashion

Properties:

Price on Amazon: 115.89? (instead of 159.95?); including 8 pans and 8 turning scrapers; Power: 1500 W; Weight 3.3 kg; Dimensions: 53 x 27 x 11.5 cm; Cable length: 2 m

Test procedure and positive features:

The Rommelsbacher RCC 1500 Fashion is not only a stylish, but also a high-quality machine in Swiss design that fits every table. When unpacking the grill came no penetrating smell from the box. The operating instructions were delivered in 2 languages: German and English. It is easy to understand and contains a small selection of proven recipes. The RCC 1500 Raclette device is really stable on its anti-slip feet without any wobbling. Even with its silver, elegant and chrome-plated case, it can be absolutely see.

The RCC 1500 has 3 levels. On the upper level is the ribbed grill plate made of die-cast aluminum. On the middle level you can grill your raclette cheese. The very low parking floor was thought of as a storage area for the hot and unused pans. The plate, all 8 pans with heat-insulated handles and the reversible scraper are coated with a non-stick coating, so that the grilled food can be easily solved and not glued. The pans are square, which is convenient when inserting the contents. The gratinated snacks are not crushed, as with many triangular pans.

Also practical are the two silver handles on the sides of the chrome frame. In the middle of the handles are black plastic fasteners, which remain cool when baking. You can touch them without burning your fingers. This model is equipped with an extra long power cable (2m). For our test, the length was completely sufficient, since we have carried out the test in the office room, where the outlet was very convenient to the device. But if you want to put your raclette grill in the middle of the table and the next outlet is a little further away, you need an extension cable. On the side of the device there is a rotary switch with integrated LEDs. The temperature of the Rommelsbacher RCC 1500 can be infinitely adjusted via the temperature controller. The red diodes are a bit confusing because they are fully lit at any level regardless of the set temperature.

Before the first correct use, we heated the table grill to maximum heat without pans. It developed a little smoke and a chemical smell. The heating up time is really fast and takes about 10 minutes. It is recommended to use the grill plate with some olive oil. After 10 minutes we have our prepared food on the grill area. When putting the ingredients on the pan, the oil started to splash. That's why we turned the temperature knob to 5. At lower heat, the oil does not spray so much. Then we turned the temperature knob back to MAX. For turning the dishes we used a heat-resistant plastic spatula to avoid damaging the plate. Since the surface is ribbed, the sausages are not rolled away. Also for meat and fish such a grill area is optimal, since the leaking juice collects among the food. This will make them nice and juicy. In addition, it is thus avoided that the gravy from the beef mixes with the juice from the fish or vegetables. The eggplants and zucchinis were done quickly. The pepper strips took a little longer. With the shrimp we had to be careful that they were not too dry. The sausages took the longest. The pancakes filled with the raclette cheese were later inserted into the raclette plane, so that the cheese did not finish earlier than the other ingredients. After about 15 minutes our food was ready for consumption. We turned the rotary switch to MIN and pulled out the mains plug.

To the raclette result:

The Nuremberg sausages were not only heated, but nicely crispy and evenly heated on both sides. The shrimp were great on the grill. The pepper strips were crisp, the zucchini and eggplant stripes? soft as butter. The cheese has melted quickly, turned brownish without burning. We did not need a reversible scraper for the cheese. The whole melted cheese flowed by itself on the plate. There were no cheese leftovers sticking to the pan. The raclette has succeeded us well. We really enjoyed the meal!

Cleaning:

To thoroughly clean the grill plate, we took it out of the unit while still warm. With a damp Zewa and a little mild handwash we rubbed off the top plate. Then all the sticky fat residues were washed off in lukewarm water with a sponge very quickly. Thanks to the good Xylan Plus non-stick coating, the grill plate was clean in no time! We also washed the pans by hand with a cloth and some rinse under running water. The entire housing with the heating element and the parking level was only cleaned with a damp cloth. Do not immerse the device in the water! The grill plate, pans and the reversible scrapers can be cleaned by hand so easily that a dishwasher cleaning is superfluous. This also protects the non-stick coating.

Criticism:

  • The raclette grill is relatively expensive. But it is a great device with decent performance and top quality!
  • As mentioned above, we find the implementation of light emitting diodes impractical. The diodes only show the operating status of the device. The set grill level we could not recognize!
  • A separate on / off switch would be recommended! For a complete shutdown you have to unplug the power cord, instead of simply pressing a power button.

Corona 45000 raclette grill

The Korona 45000 Raclette Grill was kindly provided by KORONA electric GmbH for testing!

Corona 45000 raclette grill

Properties:

Price on Amazon: 24.99? including 8 pans and 8 wooden spatulas; Power: 1200 W; Weight 2.32 kg; Dimensions: 49 x 31.5 x 13.3 cm; Cable length: 1.2 m

Test procedure and positive features:

The Korona 45000 raclette grill is particularly inexpensive and lightweight. The device has an oval shape. This form of the device is easily accessible by 8 people from all sides. A large part of the device is made of plastic. The housing is made of metal. The heating element was made of stainless steel. When first unpacking the table grill had a slight plastic odor. The enclosed operating instructions of the Korona 45000 are as bilingual as with the Rommelsbacher raclette grill. The manual contains only a classic raclette recipe.

The corona raclette grill has 2 levels. The upper level consists of a grill plate. The grill plate itself consists of 2 areas: the plump area, where, for example, crêpes or seafood can be prepared, as well as the rest of the grooved area. On the corrugated area you can e.g. fry delicious pieces of meat, fish or different types of vegetables. On the lower level, the pans are inserted with raclette cheese. The raclette pans are heat insulated on the handy handles. In addition, they have, as well as the upper grill plate, a protective layer that facilitates the detachment of sticky food and the subsequent cleaning.

Other practical details of the raclette grill are the temperature controller and indicator light, with which the temperature can be steplessly controlled. The warning light indicates when the selected temperature has been reached. As soon as the desired level is reached, the warning light goes out. The cable (1.2 m) was also long enough for us to reach our next outlet. But also here: If you want to place the raclette grill in the middle of the table and there is no outlet in the immediate vicinity, you should get an extension cable. Non-slip feet give the grill a firm footing.

Before the first use, the raclette grill and the pans were heated at idle for about 10 minutes at the highest level. In the beginning, there was stronger smoke and a smell that went down at the end of the heating up phase. After the first heating process, the device was ready for use. The grill plate and the raclette pans were lightly greased by us. Even during normal commissioning, the heating-up time is approx. 10 minutes. After 10 minutes at maximum level, the table grill was really hot, and we started by searing the food. When placing the ingredients here too, the oil splashed around, so we had to put the temperature controller briefly on the middle level. After a few minutes, we put the turret back on Max. The pieces of vegetables we fried on the ribbed area. The sausages as well as the shrimps were on the rounded area. Shortly before the end of the grilling, the pans were filled with the cheese and placed on the designated shelves. After about 15 minutes, the food was ready.

To the raclette result:

Although the Korona 45000 is a reasonably priced device, its purpose is good. The sausages have turned brown on the smooth, rounded surface. In addition, they were well-roasted just like the vegetables. The shrimp have become equally delicious and not dry. The grilling of the pepper strips took a little longer on this table grill. The other vegetables were done faster. In the end, all the vegetable parts were through and delicious. The cheese in the triangular pans has melted well. At the beginning of testing, we were a bit disappointed with the shape of the pans. However, the final result surprised us positively: Despite the unfavorable shape, the cheese remained in the pan during gratinating and did not run out. Every piece of cheese was really great melted and tasted wonderful with the other roast and the finished potatoes! Each cheese has a uniform, light brown crust.

Cleaning:

We cooled the device first, but not completely. The grill plate and the raclette pans were cleaned in a slightly warm condition. First, we took out the top plate and rinsed the food leftovers in warm rinse water by hand. Then we grated the grill plate with a soft sponge and detergent to remove the sticky remnant. Unfortunately, a light brown spot has remained on the smooth area of the plate, which could not be removed even after thorough cleaning. The pans were also washed in warm water with a sponge and some detergent. We did not use any dishwashing liquid for the wood scrapers. We rubbed the cheese rind only briefly with the Schwam and rinsed under running water. Both the spatula and the pans have become clean and free of grease after cleaning. We wiped the case with a slightly damp cloth. The oil drops on the worktop were then washed away with the same cloth.

Criticism:

  • Negatively noticed, that with this Raclette Grill everything a little wobbly. The grill plate and the pans are thin and not well processed. The device is generally not very stable. That at this price not the highest quality can be expected, is also clear. The Korona 45000 is cheaper than its competitors, but it does its job perfectly. We were completely satisfied with the result!
  • The wooden spatulas are just as mediocre processed and are a little edgy.
  • The device does not have an on / off switch
  • Difficult cleaning of the grill plate. Despite the non-stick coating, the top plate could not be completely removed from the stains.

Severin RG 2344 raclette grill with natural grilling stone

The Severin RG 2344 raclette grill was kindly provided by SEVERIN Elektrogeräte GmbH for testing!

Severin RG 2344 raclette grill

Properties:

Price on Amazon: 46.98? (instead of 59.99?); including 8 pans and 8 wooden scrapers; Power: 1400 W; Weight: 5.3 kg; Dimensions: 52.3 x 17.8 x 28.6 cm; Cable length: 2 m

Test procedure and positive features:

The Raclette grill RG 2344 makes a good impression, is robust and has an acceptable price. It impresses with its interesting design with stainless steel applications. The device has both a natural stone and a grating plate. The stone distributes the heat evenly and stores it longer. In addition, it is just perfect for gentle cooking, so that the food remains really juicy. Finally you can turn the grill plate over and use it as a baking plate for crepes. However, do not forget to clean the already used side before, so that the whole greasy remains do not drip down on the heating spiral. Since the top plate is not all stone, is the Severin raclette grill lighter than the next candidate in our test? the Cloer Raclette Grill 6430.

Immediately after delivery, the device was unpacked. From the box came a slightly chemical smell. An operating manual in 12 languages was also included. Unfortunately, the instructions for use contain no proper recipes, just a tip for preparing the raclette cheese. But we definitely do not see that as a disadvantage. You can also find quite a lot of raclette recipes elsewhere! The pans with heat-insulated handles, as well as the turning grille plate, non-stick coated. Do you have a square shape? the perfect shape for raclette cheese. The wood scrapers are well made and not rough. The feet are supplied with a non-slip material, so that the device is properly fixed on the table and does not slip back and forth.

The Severin raclette grill has a temperature control, a light, but no power button. If the knob is? Max? is turned on, the radiator is on non-stop. As soon as he reaches? Min? is rotated, the radiator is turned on or off alternately. With the indicator light you always know if the heating function is active. The device has a 200 cm cable with XXL comfort cable. The power cord is long enough for our test, but probably a bit short for celebrating at the table when the outlet is not in close proximity. In this case, we would advise you to an extension cable. Unfortunately, none of our test equipment has an on / off switch.

After the grill was wiped with a damp cloth, we heated it together with the stone surface, grill plate and pans for about 10 minutes to get rid of the smell. During the warm-up phase, the device has not only developed a chemical odor, but also slightly steamed. Fortunately, the smell does not last long, according to the instructions for use harmless and disappears very quickly after airing. We slightly oiled the turning grille plate when it was first used. The empty pans have remained outside because they can not be placed under the radiator without food. Since we wanted to test both plates, the heating of the device took longer because of the stone. The raclette device was ready for use after approx. 25 minutes with the stone slab. The same food was placed on both grill plates. So we could observe how both grill halves prepare the same food. When placing all the ingredients have properly sizzled, injected the hot fat. Therefore, we have the temperature, as with the other test competitors, reduced for a while and later put back on the highest level. The pans we have in the last minutes equipped with the cheese and placed in the grill. The stone and the insert have brought after 15 minutes good barbecue results on our table.

To the raclette result:

Whether all the vegetables, sausages or shrimp? everything was pretty crispy and tasted absolutely delicious from both plates. The only difference is that the Nürnberger Rostbratwürste on the turning grilling plate were finished faster. The melting of the cheese worked just as well. We did not need a spatula to get the cheese out of the pan on the plate.

Cleaning:

First, the slightly warm pans and the grater plate were removed and cleaned with hot water and a simple sponge with the addition of some Spüli. The cleaning went very fast thanks to non-stick coating and super light. The cleaning of the grilling stone has cost us more effort. The remaining greasy deposits on the removed stone have been carefully cleaned with a special cleaning sponge for sensitive surfaces. The washing up has been scratch-free and gentle. The half of the stone was freed from sticking residues and has become clean again. Then we washed the stone under running water and dried with a cloth. We carefully wiped the Severin table grill with a slightly damp cloth. The greasy layer on the worktop was removed using the damp sponge.

Criticism:

The Severin raclette grill has a few mini-drawbacks:

  • By his half of the stone a little heavier than the devices of Rommelsbacher and Corona
  • As with all other competitors, there is no on / off button.
  • The Severin RG 2344 has no carrying handles.
  • The cleaning of natural stone is a bit tedious.

Cloer 6430 raclette grill with natural grilling stone

The Cloer 6430 Raclette Grill was kindly provided by Cloer Elektrogeräte GmbH for testing!

Cloer 6430 raclette grill

Properties:

Price on Amazon: 46.99? (instead of 57.99?); including 8 pans; Power: 1200 W; Weight 6.4 kg; Dimensions: 39 x 28 x 13 cm; Cable length: 1.15 m

Test procedure and positive features:

Thanks to its thick stone slab, the Cloer 6430 Raclette Grill looks really sturdy. The raclette device is available at an affordable price, is stable on his feet and does what it should. The manual of the device is written clearly understandable, unfortunately only in German language. It contains 2 good recipes, with detailed instructions regarding the ingredients and the preparation process. The flagstone does not heat up as quickly as a coated metal plate. Some advantages it has over the metal grill surface anyway. First, the flagstone is a natural product. Secondly, with the help of the grilling stone, the heat can be used for a while even after switching off the grill. So you can clearly save electricity and still continue to grill for a while! The third ability of the stone is that raw dough products can also be prepared on the flat stone slab.

The metal pans are non-stick coated. The pan handles are thermally insulated. In addition, the Cloer 6430 also has a temperature control and a control lamp. With the temperature control you can set the temperature according to your desire, with the control lamp you will not miss when the grill has reached the desired temperature. Although the cable is a bit short, it is still sufficient for our test. For the raclette evening at the table you need, as with the other candidates also, an extension cord. Practical are also the non-slip feet, with which the device is equipped.

Since the stone can break during rapid temperature changes, we have prepared it before the first use accordingly: The stone plate was cleaned with some detergent under warm water, dried, coated with a heat-resistant oil and heated for 45 minutes in the oven to 220 degrees. During this time, the device was heated for about 10 minutes without food, so that the resulting smoke and odors could be timely without getting in contact with the food.

For further use, you no longer need to grease the grilling stone. The natural stone slab we have on our first use on the raclette grill? Max? heated for about 25 minutes. Once the plate has gotten hot, we put the food on it. Because we had not oiled the flagstone, only a little oil splashed from the marinated vegetables. Nevertheless, we have lowered the temperature for a while. On the grilling stone, the sausages took longer to become nice and brown. If you want to prepare meat on the stone slab, you should sprinkle some salt on the surface. The meat becomes especially tender! To bake the raclette cheese, we put the pans under the natural stone in a special tray. Overall, the crickets took about 15 minutes together with the gratin.

To the raclette result:

The preparation of the food with the Cloer 6430 raclette grill worked really wonderful. Our little sausages were inside beautiful and crunchy outside. The Mediterranean trio is also well done: The pieces of vegetables tasted spicy and delicious and spread a special scent. The shrimp were on the outside well browned and really delicious!

Cleaning:

The worst part was the cleaning. Since the natural stone was rubbed with oil prior to grilling and heated in the oven, a firmly baked layer was formed. After grilling, this layer has become even stronger. We removed the stone and washed it off with washing-up liquid under running water. The incrustations had to be scrape off carefully with a glass ceramic field scraper. With a lot of effort, we have removed the entire burnt layer. If you are worried about the glass ceramic field scraper, it could scratch the stone, we can reassure you - nothing happened. Then we washed the stone again and dried with a cloth. Unfortunately, some greasy remains have been left in the grooves as we could not scrape them out with the glass ceramic field scraper. The pans were lightly cleaned in warm water with a little rinse. We cleaned the housing and the worktop with a damp cloth.

Criticism:

The raclette is well done, but the table grill itself has some disadvantages:

  • The first time you unpacked it, the raclette device smelled pretty much like chemicals.
  • Unfortunately there are no scrapers included.
  • The Cloer 6430 is pretty heavy. Since the whole cooking plate is made of natural stone, it is the heaviest device in our test group.
  • The raclette grill has no transport handles.
  • Also this device has no on / off switch.
  • The cleaning of the flagstone was exhausting.

Our test result

At first we could not decide between two raclette grills. On the one hand we have a great raclette grill from Rommelsbacher, which is almost unbeatable thanks to its excellent quality and functionality. Unfortunately there is a big minus point with the device: it is comparatively more expensive than the other three. But there is a raclette grill that appeals to us. The RG 2344 Raclette Grill by Severin. The device has a good quality and works flawlessly. In addition, it offers us at the same time two frying plates (the metal grill plate and the natural stone plate), which expand and multiply our barbecue facilities. That's why we finally decided on the Severin Raclette Grill, whose price-performance ratio was very convincing.
