Hongshao Zhurou - a recipe from the Chinese province of Shangha - translates to red braised pork.

A recipe for red braised pork in my own way:


ingredients

  • 500 g pork lean
  • 3 spring onions
  • 1 carrot
  • 1 red pepper
  • 1 onion

For the red cherries

  • about 5 cm ginger
  • 2 tbsp sugar brown
  • 1 tsp salt
  • ¼ cinnamon stick
  • 1 star anise

To extinguish

  • about 40 ml sherry dry
  • 80 ml soy sauce light

To thicken

  • 1 tablespoon cornstarch
  • 40 ml of rice oil

Amount of water depends on the size of the wok.

The preparations for the red cherries

  • Wash the meat, pat dry with kitchen paper and cut into 3 x 3 cm pieces.
  • Free the onion from its outer skins, halve, slice and finely chop.
  • Peel the ginger with a peeler and then finely chop it.
  • Mortar the star anise into a mortar, wow, what a scent that is already rising in your nose, add the cinnamon stick to the star anise and continue to mortar; ah, these are flavors! Wow!

preparation

  1. Add 40 ml of rice oil and the sugar to the wok, stir at high heat until the sugar begins to melt, the meat add the onions and from our crushed mixture 3 slices and ½ tsp. Salt, sauté vigorously with stirring. so that the meat is well coated with the flavors.
  2. The whole thing is quenched with the sherry and the soy sauce and filled with so much water that the meat cubes are barely covered with liquid.
  3. Let everything boil up again, and now the lid on it, and as long as the temperature switch back until it is only very weak simmer, let's now so relaxed 80 minutes, so simmer to himself. Now and then stir.
  4. Now we process the vegetables and prepare the rice: Rinse the basmati rice several times with water and then let it draw for about 15 minutes in the water.
  5. Clean carrot and peel with a peeler, cut into three pieces, then cut into thin pins about 5 cm long.
  6. Clean the peppers, quarter them, remove the seeds and the white skins and cut into about 2 x 2 cm cubes.
  7. Clean the spring onions, cut the white into fine rings, cut the hard green into pieces about 3 cm long.
  8. Cook the rice according to the instructions on the package. And for the decoration cut the leaf green into fine rings.
  9. Time to send the vegetables to the wok: After 70 minutes, add the carrot sticks, the peppers and the spring onions, stir briefly and then simmer on top and simmer.
  10. After the red stain has finished, bind the whole with the cornstarch mixed in the water.
  11. Serving on a preheated plate: put a serving of rice in the middle with a spoon in the middle of a circle and then in the red braised pork, sprinkle it in rings cut leaf green over it, and now only enjoy.

To red cherries are all types of meat ... so also beef and poultry.
