No, with summer roles, I do not mean the little bumps that show above the bikini bottoms, but a light and refreshing finger food on hot days and, of course, as a side dish on the buffet.

The wraps of rice paper are very variable to prepare, depending on the taste and existing ingredients.

Everything needed for the summer roles is


  • 1 package of rice paper (also available in well-stocked supermarkets and of course in Asiashop)

Everything else I do according to my own taste.

Can be filled the rice leaves z. B. with

  • Tuna, peppers, corn, onions, kidney beans, parsley
  • Sliced ​​carrot, pepper, snake cucumber, spring onion, some basil (fresh)
  • Spring onions, shrimps, mung bean sprouts, iceberg lettuce
  • Peppers, spring onions, ginger, tofu (pickled and fried with soy sauce)
  • Chicken or turkey breast in strips, pepper strips, mangetout
  • Glass noodles or rice (especially Japanese sticky rice) round off the filling

Asian sauces (sweet or fruity, such as mango sauce, banana sauce), soy sauces - diluted with sesame seeds - but also ketchup or barbecue sauces (garlic sauce, pepper sauce), basically go with the wraps.

The taste and the composition decide.

Basically, you can wrap everything in rice paper, which can be thought of as a cold meal.

I have already wrapped fish fingers and leftovers with matching vegetables? or beef salad and with some crisp fresh ingredients it tasted very good.


  1. The rice leaves are - as required - in a suitable vessel (eg frying pan) soaked for about 1 minute in cold water.
  2. Carefully remove from the water bath and drain on a clean kitchen towel. If you have not worked with rice paper, it is better to do it one after the other, as they are not so easy to separate.
  3. Put a piece of rice paper on a plate.
  4. Fill in the center with the ingredients.
  5. Roll in once.
  6. Then turn the left and right sides inwards.
  7. As started, continue rolling to the end.

Care must be taken to ensure that the wheels do not touch each other when they are arranged, as they stick together easily.

If not consumed immediately, they should be covered to prevent them from drying out.

We eat the rolls as a whole, for guests it is more impressive to divide the rolls by a quick cut with a sharp knife.

Various dips (bottle or homemade) are a flavor enhancement and should not be missed.
