Replacement for capers - daisy capers

Delicious light "Ersatzkapern" for people who do not like capers.

First, you go on a daisy meadow, looks there for still closed flower buds and pinches off with the fingernails.

Arrived at home then the flowers are washed and spotted dry (who has, takes the salad spinner). Now the flowers are sprinkled with salt in a fresh container and remain in the refrigerator for at least 1-2 hours to allow the salt to pass through.


Once the buds have been removed, boil a sauce of vinegar water (1: 5), pepper, mustard seeds, a small piece of hot pepper and garlic in a pan (more spices to taste).

Fill the buds in spice jars, pour over the boiling broth and close quickly.

If you can not find any daisies, you can also take the buds of the nasturtium or small dandelion buds.
