Replacement for egg whites from chickpea water

Sometimes you have no eggs in the house. Or it comes visit with allergy to chicken eggs and sometimes you want to make the vegan friends happy. Another time, an egg scandal sweeps through the village or you are afraid of salmonella because you want to take a dessert with raw egg whites to the barbecue party. For which reasons you want to give up every now and then eggs, here is a recipe for Eischneeersatz from the liquid of chickpea preserves from the glass or from the can. Prepared very fast.

ingredients

  • 1/8 L of chickpea canned fluid
  • 1 level tsp baking powder
  • 1 teaspoon lemon juice
  • if necessary 3 heaped EL powdered sugar
  • possibly vanilla, cocoa, cinnamon ...

  1. Measure chick-pea canned fluid and place in a tall 1-liter jar.
  2. Add baking soda and lemon juice.
  3. With the electric whisk on the highest stage whirring until the liquid is beaten to stiff snow, that takes about 1 minute.
  4. Powdered sugar, add more spices to taste and beat again at the highest level until everything is stiff

Note

Really use only 1/8 L, because the volume reaches about 1 liter and then corresponds to 2-3 proteins. From 1 large can of chickpeas, I got in three attempts total 2.5 liters of false egg whites.
