Jam of rhubarb and dried apricots

This is a very tasty jam that you can cook well right now, because there are fresh rhubarb.


ingredients

  • 5 pounds of fresh rhubarb
  • 1 pound of dried apricots
  • 4 pounds of sugar

preparation

  1. Cut rhubarb and apricots very small, mix with sugar and leave for 24 hours.
  2. Cook for 20 minutes, stirring constantly.
  3. Put the jam into hot-lidded glass jars, turn the jars upside down for 5 minutes, then put them back in the correct position.

I cook this jam in my Thermomix, of course I save the stirring work.

And sometimes I cook them in the winter too, using frozen and thawed rhubarb. That is also very good.

The rhubarb I freeze in the spring raw in small pieces.
