Jam of rhubarb and dried apricots
This is a very tasty jam that you can cook well right now, because there are fresh rhubarb.
ingredients
- 5 pounds of fresh rhubarb
- 1 pound of dried apricots
- 4 pounds of sugar
preparation
- Cut rhubarb and apricots very small, mix with sugar and leave for 24 hours.
- Cook for 20 minutes, stirring constantly.
- Put the jam into hot-lidded glass jars, turn the jars upside down for 5 minutes, then put them back in the correct position.

I cook this jam in my Thermomix, of course I save the stirring work.
And sometimes I cook them in the winter too, using frozen and thawed rhubarb. That is also very good.
The rhubarb I freeze in the spring raw in small pieces.
