Ingredients for shortcrust pastry

- 125 g of butter
After preparation, lay the shortcrust pastry on a baking sheet and sprinkle with breadcrumbs. Then distribute 500-700 g of prepared rhubarb.

- 3 egg yolks
- 100 g of sugar
- 250 g curds (20%)
- 2 tsp cornstarch
- Juice of a lemon
- 1 cup of whipped cream
preparation
- Stir egg yolks with sugar until foamy, mix curd, cornflour and lemon juice, then fold in the whipped cream.
- Pour this fruit onto the fruit, smooth and prebake in a preheated oven at 180 ° C for 45 minutes.
- In the meantime for the second cast, whip up 3 egg whites, add 200 g icing sugar spoonwise and stir.
- Spread this cast on the pre-baked cake, smooth and bake for another 20 minutes at 150 ° C.
- Instead of rhubarb, you can also use currants, gooseberries or sour cherries.
