Rice balls: stuffed and deep fried - Sicilian arancini

ingredients

(For about 8 pieces)

  • 300 g round grain rice (risotto rice, riso arborio)
  • 750 ml vegetable or chicken broth
  • Saffron (filaments or ground)
  • 50 g of Parmesan (grated)
  • 50 g butter
  • 2 eggs
  • Flour
  • bread crumbs
  • Salt pepper

preparation

  1. Boil the rice with broth and saffron, and cover with a lid over a low heat. Leave to soak for approx. 20-30 minutes, then add butter and Parmesan and let cool.
  2. From the cooled mass form small balls (of the size mandarin - orange), then in the middle of the desired filling (see below) give, and again form a ball of it.
  3. Then bread the stuffed rice balls (just like a schnitzel: first in flour, then in seasoned egg and finally turn into breadcrumbs) and deep fry in the deep fryer or in hot oil - done :-)

Practically everything is suitable for the FILLING, there are no limits to the imagination, what is there, what has to be gone, combined with one another, as the mood takes it,

Classics are definitely

  • Sauce Bolognese
  • Salsicca (bratwurst mass)
  • peas
  • Mozzarella
  • spinach
  • onions
  • ham
  • Tomato (mark)
  • eggplant
  • Pecorino
  • Mushrooms etc.

Great as a starter, but also delicious as a main course with a big colorful salad.
