Rice pot with coconut milk and vegetables - vegan

This vegan rice pot tastes very good right now. He is very full and can do without any animal products.

  • 1 small onion
  • 3 big carrots
  • 200 g mushrooms
  • 2 peppers, big

preparation

  1. Cut all the vegetables into fine pieces.
  2. Wash the rice.
  3. Fry the onions, add the remaining vegetables gradually.
  4. Add curry paste.
  5. Stir in peanut sauce.

  7. Strain with vegetable stock.
  8. Add coconut milk.
