Risotto with black pudding

You probably all know the dark risotto with fish ink (from octopus). A similar visual effect can be achieved by adding black pudding to the normal risotto. Whether bacon or meat red sausage is just a matter of personal taste.

It does not make sense to explain here how to make Risotto, there are enough hints, even at FM. The red sausage I cut into small pieces and add them, just before the rice is soft.

As special ingredients I also take: thyme, 10 capers with some lake, 10 green peppers with some lake.

By the way: You do not have to stir risotto in the preparation! You can buff it if you have enough broth, so for about 15 minutes. In the end, of course, you have to stir. And do not forget the grated Parmesan!

We had it again today. It tasted delicious. In addition, a classic Italian red wine or a German fine dry white wine, which I have already used for the risotto.
