In most cookbooks, recipes for 4 people are calculated and presented. Small family celebrations, garden barbecues or similar outdoor events, but often require hearty recipes, for more hungry guests than 4 people.

Since I offer and sell my daily changing soups and stews in larger quantities for years, I would like to offer you on this way once the career and the emergence of a hearty, tasty and simple root vegetable stew, for a larger amount of guests:


1st variant of root vegetable stew with beef

(Time-consuming, price-intensive, kitchen-wise more exact)

ingredients

(Hearty stew for 10 people)

  • 2 large onions
  • 1 kg leek
  • 1 big white cabbage
  • 1 kg of carrots
  • 2 red peppers
  • 2 kg of potatoes
  • laurel
  • pimento
  • thyme
  • salt
  • pepper
  • 100 g of sugar
  • 2 tablespoons flour
  • Leaves of a bunch of celery
  • 1 small bunch of dill
  • some caraway
  • 1 kg of beef (tongue piece)
  • 1 kg of veal bone
  • 0.2 kg breakfast buffet or bacon

preparation

  1. Slice leeks, cut white cabbage into strips, cut carrots into strips, cubes or slices, dice the diced paprika. Peel potatoes and cut into cubes.
  2. Put the vegetables in a 10 L pot, season with salt, bring to a boil, do not simmer for more than 10 minutes, remove from heat, cover.
  3. Put 1 kg of veal bone and 1 kg of beef in a 10 L pot of salt, bay leaf, allspice, a little thyme and one onion with cold water and simmer for at least 1 hour.
  4. Note: Calf bones do not give a clear broth, but are cheaper than beef bones, because you do not necessarily need a clarified beef broth for a vegetable stew.
  5. Dice 1 large onion, cut the bacon or bacon into small cubes, add fat to a 5 L saucepan and brown until golden, sprinkle with 2 tablespoons of flour, stir well, set aside.
  6. Drain the first pot of vegetable stock (possibly pick it up for other food preparation), prepare the meat broth and the cubed beef from the second pot, pour into the first pot, add the heat from the third pot, chopped dill, leaves of the celery, Add a little cumin, 100 g sugar and add the final taste with salt and pepper.
  7. Then simmer until the vegetables and meat are cooked, but still firm.

2nd variant root vegetable stew with smoked pork

(Faster, cheaper, more energy-efficient)

ingredients

(Hearty stew for 10 people)

  • 1 big onion
  • 1 kg leek
  • 1 big white cabbage
  • 1 kg of carrots
  • 2 kg of potatoes
  • 2 red peppers
  • 1 Bd of celery
  • 1 db dill
  • salt
  • pepper
  • Caraway seed
  • thyme
  • laurel
  • pimento
  • 200 g of sugar
  • 1 kg Kasseler comb with bone
  • 200 g bacon fat

preparation

  1. Remove the bacon comb from the bone, cut into small cubes, mince the ribs, slice the onions, slice the leeks, cut the cabbage into strips, dice the carrots, cut the red pepper into small cubes, peel the potatoes and cut into small cubes ,
  2. Add bacon fat, vegetables, potatoes, celery, salt, pepper, cumin, thyme, meat cubes and pieces of bone to a 10 L saucepan and fill to 3/4 with cold water, bring the lid to a boil, then cover and simmer for one hour ,
  3. Constantly checking for bite (stews are no longer offered overcooked today) and just before the end of the cooking process, season with finely chopped dill, sugar and possibly salt and pepper.

This variant of the preparation of stews in larger quantities, are certainly not programmed in the brain cells of super chefs such as Lafer and Co., but I have found over many years of experience again and again that these "stew" - dishes are just as tasty as masterfully prepared gourmet soup ,
