Saffron potatoes with steamed broccoli florets, chicken breast fillets, mango slice and burgundy sauce.
Ingredients (per person):
- 4 medium-sized firming potatoes
- 2 chicken breast fillets (from the fresh food counter)
- 4 broccoli florets
- a mango slice
- some saffron
- Burgundy Sauce (300ml)
- a bit of salt
- baking paper
preparation
- Peel potatoes, cut into finger-thick slices and cook with salted saffron in salted water for 25 minutes.
- At the same time steam the broccoli florets in a pot and cover in a sieve (25 minutes).
- Preheat the oven to 22 ° C and fry the chicken breast fillets on the middle rack and on baking paper for about 20 minutes.
- Boil the Burgundy sauce (300 ml) in a casserole.
- Serve with a mango slice.
