Sauerkraut soup - very easy

For this simple sauerkraut soup you need:

  • 1 large tin of sauerkraut, picked, with juice
  • 1 diced onion
  • 3? 4 potatoes cut into cubes
  • 1/2 L vegetable stock (or more)
  • 1 cup of sour cream or creme fraiche
  • Pepper, pepper, salt, possibly marjoram

Fry the onion cubes, add the sauerkraut and sauté briefly. Season with plenty of paprika, add the vegetable broth and simmer for about 10 minutes.

Cook the potato cubes separately. I've always thought that was a rumor, but together with the sauerkraut the potatoes are actually getting worse.

Finally, add the potatoes to the soup, remove from the heat, add the sour cream and season well with salt, pepper and possibly marjoram.
