We are not vegetarians, but we try to eat meat at most 2-3 times a week. Then it must be organic meat or at least meat from animal welfare (which in our small town area with many villages outside, where you can buy on the farm and incidentally see how the animals are kept, is not difficult). Of course, this high quality meat is expensive. Since the housewife must see that meatless dishes are also on the table. For frugal people and remainder use this recipe from Grandma's cookbook is certainly not bad either.

Dice about 500 g stale rolls and pour 500 ml of lukewarm milk over them. Cover and allow to rest for 20 minutes. In the meantime, dice two onions and fry in 60 g butter or margarine. Allow to cool slightly. Add 6 eggs, parsley, salt, pepper, a little nutmeg and the steamed onions with the still liquid butter to the soaked bread cubes and knead them vigorously with your hands. Cover again and let rest for about 10 minutes. Then make patties with wet hands and fry in the pan until crispy.

It tastes a green or mixed salad. Also bacon salad goes very well with it. You can also add fried bacon cubes to the breadcrumbs. Or you shape out of the mass bread dumplings, which are poured into boiling salted water and left to draw for another 15 minutes; It's bacon dumplings with bacon cubes. The remnants of bread dumplings can be sliced the next day and also roasted.

The recipe makes about 12 patties or bread dumplings and can be halved, doubled, and so on. Another tip: the rolls mentioned in the recipe can also be partially or completely replaced by pretzels.
