Sharp knives safer than blurred knives

Knives need to be sharp - then you do not cut as fast as with blunt knives.

That is not a contradiction! You deal with sharp knives much more carefully than with dull ones. You probably imagine what could happen if you cut yourself. It's much easier to slip off with a blunt knife - you're already in the thumb. So, always take a very sharp knife when chopping vegetables and meat. Apart from the fact that it is much easier to cut with sharp knives - but that goes without saying.
