Sheet cake with quark mascarpone berry pudding cream

My own creation of a layered cake: a cake filled with quark-mascarpone-berry-pudding-cream. So you will not find this cake anywhere, but today it was found by the neighbors and us to be very good.
ingredients
For the dough
- 4 eggs
- 250 g butter
- 200 g of sugar
- 1 vanilla sugar
- 1 pinch of salt
- 1 tbsp rum
- 200 g of flour
- 50 g cornstarch
- 1 teaspoon Baking powder
- 100 g of ground hazelnuts
- 50 g cubed orange peel
- 100 g of chopped bitter or dark chocolate

- Beat the eggs, soft butter, sugar and vanilla sugar until creamy with the hand mixer.
- Mix the flour and cornflour with the baking powder, add a pinch of salt and stir in the creamy mixture.
- Stir in the hazelnuts, chopped chocolate, rum and orange paste with a whisk.
- Lay out a baking tray with parchment paper and preheat the oven to 190 degrees.
- Spread the dough well on the baking sheet and bake at 190 degrees for approx. 15 - 20 minutes (swab sample).
- Then remove from the oven and let cool well.
- The floor on a board or similar topple off, peel off the baking paper and halve the bottom.
For the filling
- 250 g curds
- 250 g mascarpone
- 100 g of sugar
- 4 tablespoons of lemon juice
- 1 pck. Pudding powder "strawberry flavor"
- 250 g TK berries (I had raspberries and blackberries)
- 5 sheets of gelatine

- First, soak the gelatin in cold water.
- Then you cook from just under 500 ml of water, 1 1/2 tablespoons of sugar and the pudding powder a pudding (so take some water to stir the powder, bring the remaining water with the sugar to a boil, stir the stirred custard powder and boil briefly remove from heat.
- Now squeeze the gelatin well and dissolve it in the hot pudding.
- When the gelatin has completely dissolved, add the frozen berries to the pudding. They melt in it and the pudding cools much faster. In between, always stir.
- Now add quark, mascarpone, sugar and lemon juice in a bowl and stir briefly with the hand mixer everything creamy.
- Add 3 tablespoons of the quark mascarpone mixture to the pudding and stir with the whisk.
- Then you can give the whole pudding in the quark-mascarpone and stir everything well again. Put the bowl in cold water for about 1/2 hour, stirring it several times.

- On one half of the floor, brush half of the filling and place the other half of the floor on top.
- On the top, the rest of the filling is now deleted.
- Cool the cake for about 1 hour.
- The surface of the cake can look different for everyone.
- You can put a chocolate icing or stiff cream on top.
- I whipped up 400 g of cream with 2 vanilla sugar and 2 cream stabilizers and spread over it and sprinkled with chocolate icing.
- The cake must be eaten well chilled, then it tastes great.
- I would cut it into small cubes since it is already high enough.
