Shoe soles made of puff pastry

Today I wanted to make shoe soles made of puff pastry. Sadly, they have not all become picture-book beauties, because some of them have not become shoe soles, but balloons (ha, ha)!

Well, that is, the puff pastry has partially ballooned into giant balloons, and this is truly difficult to spill and puddle with pudding. That does not necessarily have to be the same with you.


So I made a virtue out of necessity and cut out of the balloons on top a lid and then filled the pure pudding or purely injected.

For the soles below the recipe:

  • 1 packet of puff pastry from the cooling rack, 1 egg with 2 tablespoons of milk stirred

  • 1/2 l of milk
  • 1 1/2 pck. Vanilla pudding powder
  • 75 g of sugar
  • 1 pck of vanilla sugar
  • 1 egg yolk
  • 100 g of butter

(Alternative filling without egg yolks: 1/2 l milk, 40 g sugar, 1 pck vanilla sugar, 1 pck custard powder according to package instructions Beat 250 g margarine with 30 g sugar until foamy and stir in the cooled pudding bit by bit)

  1. Preheat oven to 220 ° top and bottom heat.
  2. Roll out the puff pastry sheet onto some flour, cut out the circles with a cup, then roll them out into ovals and place them on a baking sheet lined with baking paper. Brush the surface thinly with mashed egg yolks, then place in the oven and bake for approx. 12 - 15 minutes.
  3. In the meantime, heat the milk (6 tbsp and mix with the custard powder) with sugar and vanilla sugar, then add the mixed custard powder and bring to the boil. Remove some of the pudding mixture and mix well with the egg yolk. Stir the yolk mixed with the pudding into the remaining pudding and let it cool.
  4. Remove the finished puff pastry pieces from the oven and allow to cool as well.
  5. Beat the butter creamy and gradually add to the cold pudding, stir well. Now put the pudding mass in a piping bag.
  6. Throw a shoe sole thick with pudding, put the second on top. If you want, sprinkle icing sugar over it.

And, as I said, if you also have a shoe sole failed and you also have balloons, then just ... cover off and pudding in. Then you also have little boats instead of shoe soles. You can not say that, but they taste the same ... I have put pictures of both variants here for comparison.
