Short pastry made of short crust pastry

I like to bake for my life and especially pastries made of shortcrust pastry. I often get compliments for how easy and easy my shortcrust would be. So that my shortcrust pastry so very loose, I have a tip: I stir the eggs with a tablespoon of freshly squeezed lemon juice.

The lemon juice causes the components of the eggs to spread better in the dough, and the shortcrust pastry is thus particularly light and easy. Unfortunately, as a layman, I can not explain exactly which chemical processes are involved, but it would certainly be a great science project!
