Siegerländer potato bread

Time

Preparation time: 20 min.
Cooking or baking time: 50 min.
Total preparation time: 1 hr. 10 min.

For the recipe Siegerländer Kartoffelbrot take:

ingredients

  • 1 pound of hard-boiled potatoes
  • 1 pound of flour
  • 1 cube of yeast or 1 sachet
  • 1 tbsp salt
  • 1 tsp sugar
  • 200 - 300 ml of hot milk
  • 1 egg

preparation

  1. Peel and grate the potatoes (coarse and finely mixed). Add the flour and the yeast with sugar. Mix everything with a wooden spoon.
  2. Heat the milk well and pour over it. Add the salt and egg and stir well. The mass must be almost still liquid. Similar to potato pancakes / potato puff pastry for the pan. The whole 1-2 hours "let go".
  3. Preheat the oven to 240 - 250 ° (top and bottom heat). Grease a box mold and add the previously well stirred dough.
  4. Put the dish in the oven and bake the bread for about 10 minutes at the set temperature. Then switch back to 180 - 200 degrees and bake the bread for about 40 minutes.
  5. Pull out the bread and immediately throw it onto a grid. If you like, you can brush the surface while still warm with some butter, egg yolks or milk.

If you like the bread crispy, you can cool it down completely. If you prefer the crust to be "softer", put the bread in a lukewarm state in a plastic box or bag.

The bread tastes best with good butter. But you can eat it with sweet toppings or sausage / cheese etc. As you like it personally personally. The bread is about 2-3 days rather fresh and juicy.
