Simple cherry tiramisu


  • 1 glass (720ml) cherries
  • 200ml cold strong coffee
  • 70ml amaretto
  • 500g of mascarpone
  • 500g low-fat quark
  • 3 tablespoons lemon juice
  • 1 packet of vanilla sugar
  • 75g sugar
  • 200g Sponge biscuits
  • 1 tbsp cocoa powder
  • Amarettini to decorate


Pour cherries into a sieve and drain very well. Mix 175ml coffee and 50ml Amaretto. Quark, mascarpone, lemon juice, vanilla sugar, sugar, 25ml coffee and 20ml Amaretto with the blender, stir to a creamy mixture.

Place half of the sponge fingers in a baking dish. Drizzle with half of the coffee Amarettomix. Apply 1/3 of the mascarpone cream on top. Distribute cherries on top. Smooth the second third of the cream on top, cover with more spoonfuls and drizzle with the rest of the coffee amaretto mix. Loosely spread the remaining mascarpone cream on it. Approximately 2 hours in the fridge. Dust with cocoa just before serving and decorate with Amarettini.
