Simple fast lentil soup

Simple tasty lentil soup with oriental spices for 2 persons as a starter and for one person as main course:

1 large cup (Kaffeepott) red or yellow lentils (creamy)
about 3 large cups of water
200 - 250 g of yoghurt (I take 3.5%)

Spices of your choice, I like to take:
Curry (about 1 tsp)
Cumin (cumin) - ground (about 1 tsp)
Salt (to taste in the end)
Sugar (in the end taste)
Pepper (to taste in the end)
Allspice - ground (1 spoonful)
2 - 3 dried chili peppers (if you like it sharper, you do not have to)
Sweet peppers (1 spoonful)
ground ginger (1 spoon tip)
1 shot of vinegar (I take apple cider vinegar)

The lentils are washed briefly and boiled together with the water. Depending on the packing instructions, make sure to simmer sweetly. I'll add the chili peppers in the beginning and remove them in the end, but that does not have to be. I add the spices during cooking, with the exception of the salt, pepper and vinegar (I taste it at the end). Carefully handle sugar bissle, in case of doubt also taste it until the end before it gets too sweet.

When the lentils are soft and decayed, season with the remaining spices and season to taste (also with spices, after which one is just). Serve hot in a bowl or deep plate, stir in the yoghurt (it cools and takes the spice from the "top", so I season quite vigorously), maybe add a few roasted sesame seeds or some smoked poultry cut into strips.

Or stir-fried mushrooms, or roasted cubes of vegetables, or croutons made of toasted bread cubes and butter, or nothing, or some dried apricots in cubes, or dates ?, or crispy bacon bits, or something ...

Have fun trying and enjoying!
