Simply cook asparagus in the pan

I always have to smile when I see these awesome asparagus cookers with an insert. For restaurant kitchens with a large asparagus menu, this may make sense, for the normal budget, the purchase is not worth saving money and space.

The bad habit of cooking vegetables in tons of water is hopefully a thing of the past. I cook the asparagus "lying" in a larger pan with a well fitting glass lid.

It is enough a cup of water. Add a little salt, bring the water to a boil and then cook on a light fire for about 20 minutes. The remaining broth, possibly supplemented with a little broth, you can then use the same for the sauce:

Remove asparagus and warm, add a good "prick" butter and half a packet of instant "white sauce" or similar from A..i & Co., stir until smooth and boil briefly, done.
