Smoked salmon with purple potatoes and chives
This little appetizer salad is a feast for the eyes!
One needs per person:
- 2 slices of smoked salmon
- 2 purple potatoes, also called truffle potatoes, from the market stall
- chives
The sauce is stirred from: 1 teaspoon honey, 1 tbsp raspberry vinegar, 2 tbsp olive oil, pepper and salt
That is how it goes:
First cook the potatoes in salted water unpeeled, then peel. They really stay purple, like an old ink pad!
Dice these potatoes.
Arrange salmon and potato pieces in beautiful bowls. The best look white from these ingredients!
Pour the mixed sauce over it and then garnish with chives.
