Spice mixture for Graved salmon in stock
I love graved salmon! Even a salmon trout has to serve it! Unfortunately, I'm the only one in my family who likes this delicacy. Unfortunately, the spices are on average for salmon of a weight between 750-1000 g. So much for me alone? It does not work! What to do?
In the supermarket I came up with the idea! There are spice salts! Well. You can not use them for graved salmon.
So I did the following. Mason jars with clip closure taken. There are also screw jars that have 500 g of content. Crush the spices in the blender and mix with the salt / sugar mixture. And off to the glass.
Since there are different mixtures of spices, I do not use a recipe here. On each glass I wrote down the mix.
The mixture is calculated for 1 kg of fish. In this way I not only have a ready mix, but I can also dose them. And I've also found that I need less, because the sugar / salt mixtures are much more intense! And I always buy fresh dill when I buy the fish.
And the mix lasts a long time!
