Spiced rum plums

ingredients

1000 g fresh plums (without pressure marks, firm and ripe)
150 g of sugar
1 1/2 l rum (54%)
6 cloves
2 mace
2 cinnamon sticks
1 teaspoon peppercorns
1/2 teaspoon coriander seeds
1 piece star anise

preparation

Wash, halve and core the plums. Pierce with a needle several times. Put in a suitable glass jar. Sugar the fruits and pour in the rum. Put the spices in a small cloth made of nettle and tie tightly. Give to the plums. Close the glass and allow it to steep for at least (!) 8 weeks at a cool temperature. Then remove the spice bag and close the glass again.

The plums, which last about 1 year, go well with vanilla ice cream or semolina pudding. Of course you can also make a kind of wine cocktail from it:

Chop plum halves, put in a wine glass, 1-2 tbsp. spoon over the Rumfonds and top up with dry red wine.
