Spicy rice salad with sheep's cheese and tuna

ingredients

  • 500 g of rice
  • 2 onions
  • 1 pepper
  • 1 cucumber
  • 3 tomatoes
  • a little vegetable oil for the pan
  • Salt, pepper, chilli flakes
  • 85 g feta cheese (or goat's cheese)
  • 1 can of tuna in oil
  • 75 g capers
  • Parsley, dill, chives
  • a little olive oil
  • some balsamic vinegar

preparation

  1. Boil the rice, drain over a sieve and drain. But you can also use boiled rice from the day before, which should then be poured over a sieve with boiling water, because warm rice takes the taste better than cold. Put the rice in a bowl.
  2. Peel the onions, finely chop and lightly sauté with a little vegetable oil on a non-stick pan.
  3. Wash the peppers, cucumbers and tomatoes, clean, cut into small cubes, add to the onions on the pan and sauté briefly. Then add the whole thing to the rice bowl, mix well and season with salt, pepper and chili pepper.
  4. Cut the sheep's cheese (or goat's cheese) into cubes and bring it under the salad with the washed, dry-shaken, finely chopped or cut herbs.
  5. Finally add the tuna, capers, a little olive oil and balsamic vinegar and mix everything again.
  6. Then cover the salad until served, put it in a cool place and let it soak for at least one hour.

Another tip: instead of cucumber (or in addition) you can also use 1 to 2 sour cucumbers.
