Spicy wild boar roulades

Delicious spicy tasting wild boar roulades.

ingredients

  • 4 wild boar roulades
  • Salt, pepper from the mill
  • 1 - 2 tbsp medium hot mustard
  • 4 slices of mixed, smoked bacon
  • 2 rolls soaked in milk
  • 1 small onion
  • 1 egg
  • 1 cup of mixed chopped herbs
  • 1 pinch of nutmeg
  • 2 - 3 tablespoons of butter lard
  • 1 bunch of soup vegetables
  • 1 bay leaf
  • 1 sprig of rosemary
  • 1 sprig of thyme
  • 1 L red wine
  • 1 L vegetable stock
  • 1 cup of cream
  • Cornstarch for binding

preparation

  1. Tap the wild boar roulades thinly, season with salt and pepper, sprinkle with mustard and cover each with a slice of bacon.
  2. Squeeze the soaked bread rolls, mix with the peeled and finely chopped onions, the egg and the herbs, season with salt, pepper and nutmeg.
  3. Distribute the filling on the rolls, roll them up and tie them with a kitchen string. (Onions can be placed extra in the roasting pan as needed to increase the taste).
  4. Heat the clarified butter in a roasting pan, let the roulades in it all around take color, add the vegetables and fry briefly. Put in the bay leaf and the herb branches, add the red wine and the broth and simmer for 60 minutes in the oven, which has been preheated to 180-200 degrees Celsius.
  5. Mix the cream with the cornflour, add it to the sauce, cook it open for a further 20 minutes, season it again, decorate it, garnish and serve.
