Spinach salad with asparagus and stuffed tofu cubes

  • tofu

  • light soy sauce or hoisin sauce (sweetish)
  • oil

For the dressing:

  • 150 ml of rice vinegar
  • 1 teaspoon vegetable brewing powder
  • 2 tsp mustard
  • 1 tsp honey

preparation

  1. The fresh spinach is washed, radishes are sliced.
  2. From the specified ingredients, the dressing is pitched.
  3. Tofu is marinated in (light) soy sauce, which is mixed with a little honey, for about 30 minutes. I squeeze in the tofu cubes so that the marinade spreads well and tofu takes on flavor.
  4. Asparagus may remove wooden ends.
  5. Stir chopped parsley, chives, salt and chilli flakes with a little oil.
  6. Cut a small bag into the tofu cubes and fill with the herbs.
  7. Heat the butter in a pan and brown the green asparagus from all sides.
  8. Remove the asparagus, drain the tofu and fry in the pan. If the pan is big enough, both can be fried together.

Arrange radishes, spinach, asparagus and tofu on a plate, add some dressing over the salad, sprinkle with seeds, spread the sesame seeds on the tofu cubes and let them taste.
