Asparagus, asparagus wherever you look and also on me he does not pass. Today, as a light salad in the evening.
ingredients
- 1 bunch of green asparagus
- 1/2 pot of fresh parsley
- a little chive
- butter
- tofu
- salt
- chilli flakes
- pepper
- honey
- radish
- fresh spinach
- sesame
- light soy sauce or hoisin sauce (sweetish)
- oil
For the dressing:
- 150 ml of rice vinegar
- 1 teaspoon vegetable brewing powder
- 2 tsp mustard
- 1 tsp honey
preparation
- The fresh spinach is washed, radishes are sliced.
- From the specified ingredients, the dressing is pitched.
- Tofu is marinated in (light) soy sauce, which is mixed with a little honey, for about 30 minutes. I squeeze in the tofu cubes so that the marinade spreads well and tofu takes on flavor.
- Asparagus may remove wooden ends.
- Stir chopped parsley, chives, salt and chilli flakes with a little oil.
- Cut a small bag into the tofu cubes and fill with the herbs.
- Heat the butter in a pan and brown the green asparagus from all sides.
- Remove the asparagus, drain the tofu and fry in the pan. If the pan is big enough, both can be fried together.
Arrange radishes, spinach, asparagus and tofu on a plate, add some dressing over the salad, sprinkle with seeds, spread the sesame seeds on the tofu cubes and let them taste.
