During a visit to my grandmother, I talked to her about recipes. She has given me a very good tip for sponge soils that always succeed:

"Always take half" (as grandmas sometimes express themselves). It is to be assumed with the "always half of the ingredients" of the amount of eggs.


For example, if I want to bake a bottom that needs to be split twice, it's best to take 6 eggs.

Then the sugar follows. 6: 2 = 3. This corresponds to 300 g of sugar. 300g: 2 = 150g. So I need at this amount 150 g of flour. 150g: 2 = 75g. And cornflour must therefore be 75 g.

If you want, add a pinch of baking powder (for the "safety", but you do not have to) and add a pint of vanilla sugar.


Separate the eggs, beat the snow (allow the sugar to trickle in). Then carefully stir in the yolks, fold in flour and starch and fold gently. Bake at about 180 ° C for about 20 - 30 minutes.

For example, if the bottom is flatter, the recipe would be like this:

  • 4 eggs
  • 200 g of sugar
  • 100 g of flour
  • 50 g cornstarch

etc.

In my opinion, a great tip and easy to remember! And has a suitable floor for every cake - high or flat.

And above all, it always succeeds. I do not know if you feel that way either, but just when you try a new recipe, it just happened to me more than once that the ground just did not want to be as I would have liked.
